Ingredients
- 1 clove garlic, crushed
- 2 tsp paprika
- 2 tsp chilli powder
- 2 tsp ground cumin
- 1 pink saffron (soaked in cold water)
- 50 m olive oil
- 1 lemon, zest and juice
- salt and pepper
Method
- STEP 1Mix garlic, paprika, chilli powder and ground cumin in a bowl
- STEP 2drain the saffron and add to the bowl
- STEP 3whisk in the olive oil, salt and pepper and the lemon zest and juice to form a smooth paste
