Ingredients

  • 2 tsp oil
  • 1 egg, beaten
  • 2 rashers bacon, chopped
  • 175g mushrooms, sliced
  • 200g frozen peas
  • 1 garlic clove, crushed
  • small knob of fresh root ginger, grated
  • 2 tsp dark soy sauce, plus extra to serve
  • 1 tsp sugar
  • 250g cooked basmati rice

Method

  1. Heat the oil in a frying pan, then tip in the egg. Leave to set for 30 secs-1 min, swirling every now and again, then tip it out and finely slice. Add bacon and mushrooms to pan, then fry until golden, about 3 mins. Add peas, garlic and ginger, then cook for 1 min.
  2. Mix the soy sauce and sugar together. Turn up the heat, add the cooked rice to the pan, heat through, then splash in the sweet soy sauce. Stir through the egg and serve straight away, with more soy sauce if you like.

Made this for the family tonight, not me as I don't eat meat. I added onions and chicken instead of bacon. Big thumbs up all round. This is the best website for recipes :-}

Great for using up left-overs and can be easily tweaked to use up what you have left. I didn't have peas so used sweetcorn, very nice indeed.

Cooked the rice specially in strong vegetable stock so it took longer than 12 minutes to prepare, but a lovely, easy meal. The ginger makes it really tasty.

I didn't have ginger but used 1 extra garlic clove and a little extra soy sauce, it was a quick, tasty and enjoyable meal, Will have again.

Very tasty and very easy. All 3 kids and hubby ate it all. i used pancetta instead of bacon and added a pepper and spring onions aswell as the mushrooms and peas. I also added smoked mackerel in to beef it up a little but would be just as good with leftover chicken or pork. This will be a regular in our house from now on.

Left out the mushrooms but added spring onions and Five Spice.
OMG beautiful, such wonderful tastes.
Served it with sweet and sour pork.
Will make again that's for sure.

Absolutely scrumptious! I made this for the first time a couple of weeks ago and my fiance and I loved it. Now it's a regular in our weekly meals. :) So filling and tastes wonderful!

Absolutely fantastic, added leftover chicken and a bit of extra soy sauce upon serving. Went down a treat with the whole family :o)

Instead of cooking the egg at the beginning, i drain the cooked rice and whilst still steaming hot, add a whisked egg and stir till the heat of the rice cooks it. Also used wholegrain rice instead of basmati - really yummy.

Really easy,really quick,and really tasty! Swapped mushrooms for broccoli and added an onion and some sweetcorn, now make this regularly for me and my wife. As good as any fried rice restaurant dish

Fantastic recipe. I used 4 rashers of chopped streaky bacon and light soy sauce because that's all I had. I used a full 250g pack of mushrooms, a finely sliced red chilli and 3 medium eggs as they needed using up. Rather than 'leftover' rice, I added a 250g pouch of Tilda pure basmati microwave rice. It really was lovely - I'm sure I'll make this again and again.

I used brown rice in an attempt to be a little healthier, and added an onion and some quartered cherry tomatoes for more crunch and colour. I also doubled the soy and sugar and added a few drops of sesame oil. A very nice side dish to the chinese ribs recipe along with a corn on the cob. Much better than from the takeaway!
