Chicken with harissa & tomatoes

Quick and easy midweek chicken supper recipe, with just a little hint of spice

Method

  1. Heat oven to 200C/fan 180C/gas 6. Put the chicken into a medium roasting tray, then rub with the harissa, oil and oregano.
  2. Cover with foil and roast for 5 mins, then remove the foil and add the cherry tomatoes and olives to the tray. Roast for 10 mins more until the tomato skins start to split and the chicken is cooked through. Serve with boiled new potatoes

    Me and my boyfriend had this dish for dinner the other night. It was so simple and quick to make. The spiciness of the chicken was delicious, but it needed a little more time in the oven, I think I had it in for an extra 5 mins. Next time I'm going to try it with fish instead of chicken.

    Easy to prepare and tastes delicious. Couldn't find Harissa in any of my local stores so not sure how well used it is. Managed to find it in Waitrose for those who have the same problem. Served with plain rice. Now looking for other Harissa recipes.

    love this recipe! I didnt have any harissa and used chilli paste! It was sooo yummy! I cooked it in the oven with red onion, pepper and small vine tomatoes and served with crushed new potatoes! So good! Chicken was moist and tasty! A great midweek meal! So quick and easy!

    I went to my cupboard to get the harissa out only to realise I didn't have any left - replaced it with green pesto and omited the oregano - very very nice. I'm going to get some harissa and try it again. As suggested above I added additional ingredients - cooked courgette, mushrooms, red onion and sweetcorn along with the cherry tomatoes plus I did the butternut squash with garlic (I wasn't to keen on this but my husband and son both loved it).

    A really quick and easy recipe. The chicken was lovely and moist. I also roasted some peppers and onions. It,s a good way of cooking chicken breast in the oven without it drying out.

    Hi Quite a tasty dish. I served it with cous cous which I thought went with it better that potatoes. Chicken deffinitely needed another good 5 mins though

    very nice recipe - will use over and over again. A family favourite! Definitely need to marinate for a few hours and as someone else said add a bit more harissa for a nice kick!

    It was ok - pleasant, but not something I will be making again. I marinated the chicken in the harissa for a couple of hours, and served with roasted sweet potatoes, courgettes and peppers. It was alright, but it wasn't particularly enjoyable.

    Couldn't be easier to make and perfect for a week night after work. The cherry tomato and olive mix works really well but I have made this several times now and used whatever vegetables I had. Delicious and highly recommended.

    Really, really nice!The harissa goes very well with the chicken!! I normally have a couscous and sweetcorn salad on the side from a different recipe and the whole thing is just delicious!!!!

    I made this last night, and I have to say it was just fantastic. Beautifully moist chicken breast, punchy flavours and perfect for a hot summer evening. Served it with the bruised potatoes and olive oil that comes with the suggestion. Perfect, easy and very tasty! Give it a go!!! Can't wait to do it again! X

    Absolutely delicious! I cubed the chicken, and used a pack of olives with feta. Took much longer than the 15mins, I ended up cooking for 45mins, but despite this, the chicken was lovely and moist still. The feta had all but disappeared so next time will add 40 mins in. Will definitely be cooking this again, maybe adding mushrooms and red peppers to bulk it out (less carbs than potatoes!). Would also be fab with brown rice.

    Made this a couple of times now, using lemon Harissa pasta and adding extra veg to the tray (peppers, courgettes etc). Real favourite and a delicious, quick supper. Served with roasted sweet potato.
