Strawberry & passion fruit meringue roulade

This light-as-air pudding is the ultimate in show-off cooking

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Line a Swiss roll tin, (about 23cm x 30cm) with baking paper. Whisk the egg whites with a pinch of salt until stiff. Slowly add the sugar, still whisking, until stiff and glossy. Spoon the mixture evenly onto the baking tray and bake for 15 minutes, until crisp on the outside. Remove and cool completely.
  2. Lay a piece of fresh greaseproof paper out and flip the meringue over onto it, carefully pull away the used paper and discard. Spread the lemon curd over it and then the passion fruit seeds. Whip the cream with the passion fruit juice and spread on top of the lemon curd. Sprinkle over the strawberries. Roll the meringue up lengthways using the paper to help turn it over. Put on a serving tray and dust with icing sugar.

    Really yummy but the meringue was a bit thin so the second time I made it I used 6 eggs and 300g of sugar and it worked much better

    This was incredibly easy to make, from start to finish in under an hour with a restless toddler being a pain! I added a kiwi fruit too, the flavours were great. A crowd pleaser

    Judging by the picture, I thought this was going to be fiddly but it turned out wonderfully. It was refreshingly light, and the combination of the tangy lemon curd, passion fruit and sweet strawberries was yummy.

    Offered to take a pudding to a friends - this certainly impressed! I used 5 egg whites and 250gms of golden castor sugar and just left it in the oven a few minutes longer, worked perfectly.

    Made this for a family lunch and everyone loved it, the only change I made was to leave out the passionfruit seeds completely. A great success and will definitely make this regularly, especially when entertaining.

    Made this for a familly meal and it was gone in seconds! I followed katieg's suggestion about making more meringue mixture and it turned out exactly like the picture, however I had to cook it for a bit longer. I just used strawberries and would definatly make again!
