Warm Puy lentil, cherry tomato & halloumi salad

Ready in just 30 minutes, this is a great after-work supper for four (or with leftovers for lunch for two)

Method

  1. Toss the tomatoes, red onion, garlic, lemon juice and olive oil in a bowl. Cook the Puy lentils until just tender, drain and add to the bowl. Season well and toss.
  2. Grill the halloumi until golden. Stir the coriander through the lentils and serve with the halloumi.

    Really different. Lovely, but I actually put more lemon juice and balsamic vinegar. Wasn't really sure how much water to cover the lentils. but got there at the end. :-)

    I love this recipe, I've made it several times now, for a weekend tea - had it with roasted squash and goats cheese (love cheese!) and also served to guests who also loved it.

    Extremely nice and satisfying dinner. My husband and I had it all between us. I coated the halloumi in chilli powder before grilling and sprinkled on just a few fried chorizo crumbs. Chilli on the halloumi is essential in my opinion as gives a nice warmth to the dish. Think I'll try with crispy bacon strips next time.

    This was a great warm salad. Ended up marinating the halloumi slightly to give it a more flavour which I then fried for 10mins rather than grilled. Went down a treat with everyone, will definitely use this recipe again.

    This was very nice. I changed it slightly, I didn't have any red onion, so I used shallots but fried them and the garlic for a bit first and added some mushrooms before mixing with the tomatoes and lemon juice. I halved the recipe as it was just for myself, and found that I ate more than half of it, so, as other people commented, there probably wouldn't be enough for 4. I would probably rinse the halloumi in future as it was a bit salty for me.

    Really tasty and filling, I stuck to the recipe pretty exactly apart from green lentils instead of puy, which were fine..served with a made up butternut squash and mushroom burger type thing, went very well.

    Such a delicious salad! The red onion and coriander gives it a real kick. I used red lentils and added bacon lardons. It served 2 and not 4!

    Gorgeous! Just made it and we all chowed down - served two adults and a 6 year old. Had no coriander available, so added a nice leafy salad. Used green lentils instead of puy, and didn't quite have enough halloumi, but it still did the trick!

    Very tasty! I followed suggestions from previous posters: * macerated the onions and garlic in lemon juice for an hour. * fried the halloumi with finely chopped fresh red chilli (half). I think the fresh coriander "lifts" the dish and is definitely required.

    Absolutely great. I didn't have time to cook lentils so I used orange ones and they turned into mash but its the first time I've tried halloumi and I love it.
