Warm Puy lentil, cherry tomato & halloumi salad

Ready in just 30 minutes, this is a great after-work supper for four (or with leftovers for lunch for two)

Method

  1. Toss the tomatoes, red onion, garlic, lemon juice and olive oil in a bowl. Cook the Puy lentils until just tender, drain and add to the bowl. Season well and toss.
  2. Grill the halloumi until golden. Stir the coriander through the lentils and serve with the halloumi.

    halloumi is usually made using goats and sheeps milk and rennet (enzyme from animals stomach) to set it. Therefore I don't think halloumi cheese can be classed as vegetarian. Sorry veggies!

    A triumph! My daughter and I really loved it. I swapped the cherry tomatoes for red pepper. I roasted the red onion and red pepper and added the zest of the lemon and some haricot beans. Will definitely make this again! Thank you!

    so good. i never use the coriander and only a tiny squeeze of lemon and its perfect. so yummy and not super fatty/sugary! so quick! so good! perfect fusion of flavours!

    This is probably my favourite recipe on this site and a regular on our lunch menu! Even though there are few ingredients (we never use coriander but always add croutons) it tastes divine. I have poached the salad dressing and use it all the time for a healthy, zingy, fresh and easy addition to salad leaves. Absolutely delicious and one everyone should try at least once (but I can almost guarantee you'll revisit it!).

    My goodness, I could eat this everyday! It is delicious. I didn't add the coriander, not being a big fan, so can vouch that it doesn't depend on it. Strongly recommend this dish! Though calling it a salad is pushing it...
