Rocket soup with goat's cheese

Method

  1. Fry the onion gently in a slug of olive oil until it softens, add the potato and stock and bring to a simmer. Cook until the potato is soft, season well. Add the rocket and cook for 2 minutes. Whizz the mixture in a blender.
  2. Pour into bowls and add a couple of slices of goat's cheese to each bowl.

    First crop of rocket and it just been rain rain rain...so decided to make this soup and it was nice and tasy - I added some garlic and a dash of tabasco to spice it up a little.

    This soup is one of the simplest I have ever made and tasted delicious. I have to confess to using left over mashed potato which worked very well - just fry onions, add stock and mash stirring to blend it in and then carry on as receipe states. Gave some to my colleague at work who does not cook and she liked it so much I've had to print off the receipe so she can make it. Will definitely be making this one again.

    Really sorry but this is horrible! Tastes nothing of rocket and leaves little hairy bits in soup. Olive magazine normally do good recipes but this is so bad in so many ways!
