Tasty Sausage Casserole

Tomato based sausage casserole, a healthy(ish!) cheap family meal.

Method

  1. Gently fry the sausage in a large pan (a wok is good) in the olive oil until cooked through and golden brown.
  2. Remove sausage and keep to one side. Now, in the same pan fry the onions and garlic untill softened. After 5 mins or so add the peppers, mushrooms and sundried tomatoes, cook for a further few mins then return the sausages to the pan.
  3. turn the heat up high, add the red wine and cook for a few mins to reduce slightly.
  4. Add the passata, sugar, basil and paprika and simmer for half an hour. (or as long as you want really the longer its left the better the taste its amazing reheated the next day!)
  5. Season to taste if liked and serve with fluffy rice, crusty bread or with pasta. Try with any other veg in you like.

    Brilliant - half a teaspoon crushed chillis never goes amiss in casseroles either! I added in potatoes to make it easier to just get out of the freezer and heat up:)

    I substituted the sausage for rump steak and the the rest of the ingredients for pastry, gravy and chips the result was fab!!

    I tried this the other night and it was great! I added my own little touches on it. As i served with spaghetti as a pasta dish, i added a finger chilli, lots of paprika, more red wine than instructed, a boquet garni and once the source had been cooking for 10 mins i added 3 more cloves of garlic raw and by the time i served the garlic was soft juicy and full of flavour. I also used chilli butchers sausages from Tesco and I thought that it really worked. I probably wouldn't serve as a casserole just because i adapted it to become a pasta sauce but definitely one for the recipe folder!

    Excellent very tastey alot better than packet mix I used mixed herbs instead of chopped basil and left out the sun dried toms and used plain mushroom it was lovely!

    This recipe is delicious for a quicka and easy meal. My daughter and i thoroughly enjoyed it. We added 1 teaspoon of chilli powder due to the weather being so cold and served it with mashed potato. Gorgeous. Thanks :)

    Simply delicious. I added some beef stock and also some tomato puree with all the ingredients listed. Great with pasta. Will cook again!

    Made this in an emergency when unexpected family turned up, was really tasty and there were clean plates all round! Added a tin of cannellini beans to make it a hearty meal.

    4th or 5th time making this now keep adding bits and pieces each time all the family really like it a definate favourite. A great dish to put extra veg to keep the kids 5 a day on track.

    Cooked this last night and it was absolutely delicious! I didn't add sundried tomatoes because I used some lovely sausages I found in ASDA - debbie & andrew's Sicilian pork sausages with garlic, sun-dried tomatoes, basil and mozzarella - yummy ... will use the recipe again when I have friends round for supper, with a couple of different flavours of mash and savoy cabbage ... thanks for the recipe Helen.

    This was a big hit with my family - I slightly pre-cooked the sausages in the oven first, and in the meantime added the rest of the ingredients to my slow cooker. Actually a good way of adding some extra things that need using up - I managed to sneak in some diced carrots and peas (without the kids noticing). I then left it for 5-6 hours. Went down a treat.     I have made this recipe loads of times since finding it here and I've got to say it has become a firm family favourite! The kids absolutely love it and its a great way to get veg inside them (finely chopped of course). Easy to make, delicious and inexpensive - perfect!

    Made this tonight, boys had it with pasta and I had brown rice. It was simple and fairly quick. Although I reduced it, it was a little thin for pasta and would be better with some sort of bean added, i.e. haricot blanc, for substance and served with crusty bread. I might also throw in a few chilli flakes to warm slightly and add a bit of depth to the flavour.
