Chicken skewers with bulgar wheat & corn salad

Method

  1. Cover the bulgar wheat with boiling water, then cover with clingfilm and set aside for 10-15 minutes or until tender. Mix the celery salt, coriander and a little black pepper. Rub into the chicken and thread onto skewers.
  2. Cook the corn in boiling water for 10 minutes and then slice from the cob. Fluff up the bulgar and add the corn, onion and tomatoes. Mix the basil, vinegar and oil in a small bowl along with some seasoning.
  3. Cook the chicken under a hot grill for 3-4 minutes on each side, or until cooked. Serve with the salad and dressing drizzled over both.

    is 10.2grams of fat realy LOW fat??? I am currently on a low fat diet due to a gall stone problem and have been advised not to eat anything with more than 3g of fat in a portion

    Mamawitch - iv been on loads of low fat diets in my time and generally its the saturated fat which has to be less than 3g not the overall fat. I might be wrong in your case but hope this helps :-)

    Yum, yum and then yum again. I add red peppers to my skewers too. Quick, simple and tasty which is exactly what you need mid week.

    I absolutely love this dish!!Have done it so many times, and I especially love the side, which I use very often to different grilled meats!!!Really nice and light midweek dinner!!!!

    Easy to cook and delicious, didn't have bulgar wheat so used some couscous and also added some mixed salad leaves. The dressing is simple but so tasty, will defo cook this again.
