Asian pork noodle salad

This fresh, healthy dish is a clever way to make mince go further

Method

  1. Pour boiling water over the noodles and leave to soak until tender. Drain and cool under running water then drain again.
  2. Cook the lemon grass and shallots for 1-2 minutes then add the pork mince and cook until browned and cooked through. Stir in the sugar and cook until it has dissolved. Cool.
  3. Mix the dressing ingredients together. toss with the noodles and pork, then add the coriander and mint and toss again.

    This is really tasty, but I had it warm instead of cold and tripled the recipe but found it was only just enough dinner for my housemate and me. We served it with sweet chilli sauce and gobbled the whole thing:)

    This is a lovely, light tasty meal. Really enjoyed it and will definitely make again. We used random bags of salad and cherry tomatoes that we had as well as the fresh herbs.
