Spicy chorizo potatoes with fried eggs

For a budget-friendly supper, Spanish-style, you can't beat this simple, spicy treat

Method

  1. Cook the potatoes in boiling water until tender. Drain really well then fry in 1-2 tbsp olive oil until golden. Scoop out the pan, then add the onion and chilli and keep frying until softened. Add the chorizo and paprika and cook for a minute then add the potatoes back and cook, tossing everything together.
  2. In a separate pan, fry the eggs. Serve on top of the potatoes.

    Mm. Delicious, a kind of Spanish fry-up. I leave off a star because it was all rather greasy, but this can be reduced by roasting the potatoes after boiling rather than frying (I intended to do this but was short on time).

    Very tasty and easy dish! My 2 year old really enjoyed it as did my husband and I. I left out the chilli and we just added our own chilli flakes as desired. Next time I will use less mushy potatoes and it will be better.

    Tried this, lovely. Would definitely make again. I added some jalapeños from a jar, because I didn't have any fresh chilli. Worked just as well Great for during the week, I boiled the potatoes before work so I could just get going when we got home, making it even quicker

    I ended up serving the fried potatoes seperately and cooking the chorizo and onion etc with some tinned plum tomatoes. Was delicious.

    This was a really simple tasty meal, the kids loved it with baked beans for a bit of fibre, very quick to do so a definite when there are after school clubs.
