Spicy chorizo potatoes with fried eggs

For a budget-friendly supper, Spanish-style, you can't beat this simple, spicy treat

Method

  1. Cook the potatoes in boiling water until tender. Drain really well then fry in 1-2 tbsp olive oil until golden. Scoop out the pan, then add the onion and chilli and keep frying until softened. Add the chorizo and paprika and cook for a minute then add the potatoes back and cook, tossing everything together.
  2. In a separate pan, fry the eggs. Serve on top of the potatoes.

    Yummy! Posh egg and chips! Not something I'd make for guests but makes a quick and easy mid-week meal for two. Vey tasty and also cheap to make. Will make again

    Delicious! I add a can of chopped tomatoes to wet it up and top with a poached egg which seems to compliment the 'mushiness' of the dish. Also used easy chilli/chilli flakes to make this easier and more store cupboard friendly.

    Very easy meal - and absolutely delicious. I added a couple of tomatoes and fried them along with the onion - which gave the dish a bit more of a sauce. A definite winner !!

    Just made this for supper. Everyone loved it. I doubled up the recipe for 3 people and it was just enough. Would thoroughly recommend this recipe and will definitely be making this one again. I kept to the recipe as written, but might try the suggestion for adding some tomatoes the next time. Also will poach the eggs next time instead of frying to lower the fat content a little.

    very tasty and very filling. I added a yellow pepper as well. And a cup of chicken stock and a squeeze of tomato puree to "wet" it up a bit! Lovely flavour!

    Absolutely great quick and easy dinner dish! Made it for myself and my boyfriend and we both loved it. Used a bird's eye chilli which made it VERY hot. It was delicious though, very Spanish!
