  1. Heat grill to medium and line the grill pan with foil. Beat the egg white on a plate with a little salt and pepper. Tip the Parmesan onto another plate. Dip the chicken first in egg white, then the cheese. Grill the coated chicken for 10-12 mins, turning once until browned and crisp.

  2. Meanwhile, boil the potatoes for 10 mins, adding the peas for the final 3 mins, then drain. Toss the vegetables with the spinach leaves, vinegar, oil and seasoning to taste. Divide between four warm plates, then serve with the chicken.

The Chicken with Parmesan was a lovely combination. For us, the peas with potatoes was too heavy! We felt more Spinach would make for a much more pleasant meal. Tasty and easy as a starting to our Goodfood collection

I added breadcrumbs with the Parmesan, really nice but i think it needs double dipping for the coat- lovely tea though.

I used a combination of parmesan and breadcrumbs which gave a better crunch than parmesan alone might have. Maybe the chicken breasts I used were just big, but it did take about 45 minutes in my electric grill. Maybe next time cooking with a metal skewer through the middle might help the inside cook through. Overall result was good though, if you have extra time to spare.

I only had thighs, so did those and it was lovely, although did not crisp up as I had imagined. Will leave longer next time. Very juicy. I did steamed, carrots, parsnips, broccoli and leeks with melted butter and grated nutmeg. It all seemed to go together beautifully. It was just a Friday night after a buckshee day off. Lovely all round.

I tried this recipe today for the chicken and it was delicious. I had the chicken with rice and beans instead of potato and I diced the chicken as well and mixed it in with the rice. I will definitely be making this again!

really tasty result! the chicken was succulent and the parmesan was a nice mild flavour. I didn't have spinach or new potatoes, so I just boiled some broccoli with the peas!

This was really tasty! But I made my own dressing using 2 tablespoons of pesto and a little olive oil. Yum!

I would echo many of the positives about this recipe, it was lovely and i will do again, however just a couple of observations. Firstly I either dredged up too much egg whites o to the fillets or my Parmesan was not grated finely enough because by the fourth fillet the Parmesan was coagulating into little balls, and secondly grilling with foil underneath did protect the grill pan but also melted the cheese on the underside at the same time as the top and I found myself grating a little more Parmesan over the fillet after turning them. I'll may be use a silicone baking sheet or parchment next time and see how that works. Other than that it was light tasty and very enjoyable.

Amazing dish, really easy to make and so tasty.

We use sweet potato instead of normal potato and gives it an even better taste.

Easy, tasty and went down well with husband. Cooked the chicken in the oven rather than under the grill, took slightly longer but still worked well. The dressing and salad complement the parmesan chicken. Would recommend this one to do again.

This is a brilliant recipe, this make me stumbling to your site. I made it for my husband last night. It is simple and delicious. You just can't go wrong cheese and butter. I didn't follow the exact instruction, I replace tomato pasta sauce with pesto pasta sauce. This chicken will go well with rice too. Thanks for sharing all the valuable instructions.

Loved the salad, but felt the chicken dried out a tad. Still a lovely dish if the chicken was a bit more moist it would have been perfect.
