Parmesan spring chicken

Method

  1. Heat grill to medium and line the grill pan with foil. Beat the egg white on a plate with a little salt and pepper. Tip the Parmesan onto another plate. Dip the chicken first in egg white, then the cheese. Grill the coated chicken for 10-12 mins, turning once until browned and crisp.
  2. Meanwhile, boil the potatoes for 10 mins, adding the peas for the final 3 mins, then drain. Toss the vegetables with the spinach leaves, vinegar, oil and seasoning to taste. Divide between four warm plates, then serve with the chicken.

    The chicken was good, but the salad was bland. A nice recipe, but lots of other better ones on this website.

    What can I say to add to these comments - just try it. it is Great. the chicken pamesan topping took longer to brown and crisp but that may be becasue I had the grill too low. Lovely moist and tasty.... veg great too. I used fresh green beans instead of peas.

    i fried off the potatoes in a little garlic oil and really made the texture better although not as healthy! all in all a yummy dish.

    I cooked this dish for my 90 year old mother who normally eats very bland food - she loved it, couldn't believe how light it was and commented on the lovely spring/summer 'colours' on her plate! It was very quick to make and my sisters are all requesting copies of 'mum's favourite dish'!

    This was just okay.. chicken was moist but the cheese stuck to the foil so I ended up with just plain chicken. The salad was ok, but nothing special. Not a favorite..

    I made this for 2 and did find that by dipping the chicken in the cheese it pretty much used it all up so think I'll scatter it on next time! However this was so simple and tasty, and excellent on such a warm night. We will be having this again. PS - used mange tout instead of the peas.

    I have just made this for me and my partner and it was absolutely gorgeous we really enjoyed it and will definitely make it regularly. The chicken stayed nice and moist and the parmesan browned nicely. I served it with garlic and herb potatoes and veg. I made my 2 fussy kids something different but they tasted it and loved it so next time i will make some for them

    One of my favourites. I find it easier to make with two egg whites and I use more than five spoonfuls of parmesan. It takes longer to make than twenty minutes but it's well worth it. Do yourself a favour - make this!

    Really lovely recipe. I chopped up some smoked back bacon , crisped it up in some olive oil and stirred it in at the same time as the potaoes and peas with a finely chopped spring onion which was really good. Definately making it again

    I was concerned at how tastey this would be as the salad contained only a few ingredients, but it was delish! The chicken was really flavoursome and the salad really complimented it. Will certainly be making again soon.

    Tasted fantastic, I was really surprised by just how good it was (I had 2nds then 3rds!). I found that I needed a fair amount more parmesan than it says. Will defintely do this one again. Really fresh flavour the white wine vinegar with the potatoes and salad makes all the difference.
