Parmesan spring chicken

Method

  1. Heat grill to medium and line the grill pan with foil. Beat the egg white on a plate with a little salt and pepper. Tip the Parmesan onto another plate. Dip the chicken first in egg white, then the cheese. Grill the coated chicken for 10-12 mins, turning once until browned and crisp.
  2. Meanwhile, boil the potatoes for 10 mins, adding the peas for the final 3 mins, then drain. Toss the vegetables with the spinach leaves, vinegar, oil and seasoning to taste. Divide between four warm plates, then serve with the chicken.

    Tried this today and everyone loved it !! My daughter hates cheese normally but this one resulted in a clean plate. So easy will be making this again soon. Salad was lovely.

    It's a bit fiddely and messy to begin with but well worth it as this is a delicious meal and looks good on the plate too. Substituted peas for green beans, think I can definately impress with this one in the future

    It was yummy, I want more. Used a balsamic dressing instead of the white wine vinegar and it worked a treat, also added breadcrumbs to the cheese and shallow fried in chilli oil which added a lovely little kick. Will do again very soon!

    Fresh, tasty, lovely flavour combinations and reasonably healthy. Went down well with everyone and simple to make. I would definitely recommend this recipe and would make it again. For a vegetarian version I had the salad with slices of haloumi griddled simply in a little olive oil. Went very well with the flavours of the salad. Lovely.

    I gave this recipe a try and to be honest I thought the parmesan would burn before the chicken was cooked though, but I was wrong. It was delicious, everyone in the family enjoyed this, very summery with the new potatoes, spinach and peas. Will be making this again soon!!

    Very easy and quick to make. I have made this a couple of times since and it makes a great lunch or easy starter. I have also mixed a little breadcrumbs and finely ground mixed nuts to give a different taste and texture.
