Parmesan spring chicken

Method

  1. Heat grill to medium and line the grill pan with foil. Beat the egg white on a plate with a little salt and pepper. Tip the Parmesan onto another plate. Dip the chicken first in egg white, then the cheese. Grill the coated chicken for 10-12 mins, turning once until browned and crisp.
  2. Meanwhile, boil the potatoes for 10 mins, adding the peas for the final 3 mins, then drain. Toss the vegetables with the spinach leaves, vinegar, oil and seasoning to taste. Divide between four warm plates, then serve with the chicken.

    Very nice, easy recipe. Takes next to no time to prepare. May wish to add a little more white wine vinegar depedant on taste. Enjoyed with a nice glass of white wine. Very nice meal.

    This recipe was fantastic. I decided to add a few Italian herbs and mixed herbs to the Parmesan, and also, dry frying some chopped pancheta and sprinkling over the top add some lovely flavour to the dish! Fantastic and will definitely make again.

    This is a family favourite. I put the chicken on a bed of couscous instead which includes some fried onion or spring onion, peas and tomatoes with zest and juice of a lemon. Kids love the couscous. Its so quick and great midweek.

    Just made this for a midweek meal. Was yummy! I changed the potatoes to roasted in olive oil in the oven with some spice on them and really finished the meal off well. Will be making again!
