Ingredients

  • 1 egg white
  • 5 tbsp finely grated parmesan
  • 4 boneless, skinless chicken breasts
  • 400g new potatoes, cut into small cubes
  • 140g frozen peas
  • good handful baby spinach leaves
  • 1 tbsp white wine vinegar
  • 2 tsp olive oil

Method

  1. Heat grill to medium and line the grill pan with foil. Beat the egg white on a plate with a little salt and pepper. Tip the Parmesan onto another plate. Dip the chicken first in egg white, then the cheese. Grill the coated chicken for 10-12 mins, turning once until browned and crisp.
  2. Meanwhile, boil the potatoes for 10 mins, adding the peas for the final 3 mins, then drain. Toss the vegetables with the spinach leaves, vinegar, oil and seasoning to taste. Divide between four warm plates, then serve with the chicken.

This is a family favourite. I put the chicken on a bed of couscous instead which includes some fried onion or spring onion, peas and tomatoes with zest and juice of a lemon. Kids love the couscous. Its so quick and great midweek.

This recipe was fantastic. I decided to add a few Italian herbs and mixed herbs to the Parmesan, and also, dry frying some chopped pancheta and sprinkling over the top add some lovely flavour to the dish! Fantastic and will definitely make again.

Very nice, easy recipe. Takes next to no time to prepare.
May wish to add a little more white wine vinegar depedant on taste.
Enjoyed with a nice glass of white wine.
Very nice meal.

What can I say! Entire family loved this which is an achievement I can tell you! I used shop bought garlic and herb potatoes which I microwaved and and then chopped and added to a herb salad with asparagus and green beans. Fab!

it was ok. a bit too cheesey. not sure where you're getting your timings from but i'm pretty sure chicken and potatoes take alot longer than 10-12 mins to cook unless cut into very small pieces.

Quick and easy to make but the chicken was a little plain. Might add garlic to it and maybe a cream cheese and chive filling.

Has anyone tried this with a cheaper hard cheese? I assume the parmesan is crispy and I want to try to get the same sort of texture without paying for what counts as 'posh' cheese in our house (yay for being a poor student :) )

This was brilliant. So simple and easy to make. I added some breadcrumbs to the parmasean and some broad beans to the salad. I loved it. One of the best recipes for any chicken summer food I have ever used :)

This is a variation of a recipe I've done for several years, which always goes down a treat. I use breadcrumbs and grated parmesan, moistened with lemon juice and a little olive oil + black pepper and chopped parsley. Make some incisions in the chicken breasts and spread the mixture over and grill. It's really yummy and you can make up your own amounts of each ingredient to suit. Sadly, I haven't made it this summer, simply because the grill doesn't work on this awful inherited oven from our move in January!! Can't wait for the new oven!!
