Parmesan spring chicken

Method

  1. Heat grill to medium and line the grill pan with foil. Beat the egg white on a plate with a little salt and pepper. Tip the Parmesan onto another plate. Dip the chicken first in egg white, then the cheese. Grill the coated chicken for 10-12 mins, turning once until browned and crisp.
  2. Meanwhile, boil the potatoes for 10 mins, adding the peas for the final 3 mins, then drain. Toss the vegetables with the spinach leaves, vinegar, oil and seasoning to taste. Divide between four warm plates, then serve with the chicken.

    i was on a low budget after a day out clothes shopping so i just used a little bit less of some mild cheddar instead of parmesan and it tasted great!!!!

    Loved this one, so so easy and quick to do and tasted really good with the parmesan. All store cupboard and freezer items. The chicken was so tender and tasty and crispy I served it with new baby potato and white asparagus with drizzle of olive oil, parmesan shaved curls and a slice of lemon. It is on my list of do again, Family loved it.

    Delicious and very easy to make. With just a small effort, a simple grilled chicken breast seems much more impressive - and the salad is a perfect complement.

    Excellent mid week meal. Quick and delicious. Much healthier than the local (Teesside) 'Parmo'!! (Breaded chicken or pork escalope topped with a parmesan bechemal sauce and grilled). Even parmo loving daughter loved it tho' she did say it should be served with chips! (You can take the girl out of Teesside but ...). Me and P liked the veg tho' I'd run out of peas and used green beans instead. Will defo do again.
