Easy chicken tagine

Simple one-pots are perfect for the busy cook. This chicken tagine is great eaten with cous cous for something a bit more filling

Method

  1. Heat the oil in a large, wide pan with a lid, add the chicken, then fry quickly until lightly coloured. Add the onion and ginger, then fry for a further 2 mins.
  2. Add 150ml water, the saffron, honey and carrots, season, then stir well. Bring to the boil, cover tightly, then simmer for 30 mins until the chicken is tender. Uncover and increase the heat for about 5 mins to reduce the sauce a little. Sprinkle with parsley and serve with lemon wedges for squeezing over.

Tip: chicken breasts

You can make this dish using 4 boneless, skinless chicken breasts instead of thighs. Simply cut them in half and reduce the simmering time to 15 mins.

    What a fantastic dish - although little unsure about the addition of honey it worked a treat. Served it with cous cous - what a success! My three year old thought it was wonderful.

    Quick & easy, I doubled it to feed 8 including children. Carrots were delicious & were commented on. I added garlic & chicken stock, but would add more spices as previous suggestions & a little chilli, but was afraid to add this time because of the children. Will make again soon.

    Tasty dish, very easy to make and will recommend to others. Only thing i would change is to add a bit more a kick to it, will follow other recommendations next time and add some cinnamon and garlic. 8 out of 10.

    I added garlic, courgettes, red pepper and a can of chickpeas to make it go further and used a tspn of marigold stock and the result was enjoyed by the whole family. I will definitely try with the cinnamon and cumin next time.

    I followed the original recipe & found this really tasty.We all enjoyed it,including our 23mth old son.The chicken was lovely & tender & the carrots carried the taste of the honey & ginger beautifully.Will be making this a family favourite,thanks!

    Keeping in mind that this is from the 'make it tonight' section of the mag, I have to say that it is exactly what they say it should be - a quick and easy (low fat) mid week meal. The girls (2 and 5) help me pick baby carrots and jersey royals from our local farm shop, then spent a great fun half hour scrubbing them clean! Enjoyed by all!

    Gorgeous. However I did add some Garam Masala, cumin, cinnamon, veg stock, dried apricots and flaked almonds........ the result was wonderful.

    I made this tonight and it was great. I followed some of the suggestions. I used both saffron and tumeric. I also added cinnamon, cumin and some raisins. I squeezed one lemon in at the end and added my home grown parsley - YUM
