Ingredients

  • 2 tbsp olive oil
  • 8 skinless boneless chicken thighs, halved if large
  • 1 onion, chopped
  • 2 tsp grated fresh root ginger
  • pinch saffron or tumeric
  • 1 tbsp honey
  • 400g carrots, cut into sticks
  • small bunch parsley, roughly chopped
  • lemon wedges, to serve

Method

  1. Heat the oil in a large, wide pan with a lid, add the chicken, then fry quickly until lightly coloured. Add the onion and ginger, then fry for a further 2 mins.
  2. Add 150ml water, the saffron, honey and carrots, season, then stir well. Bring to the boil, cover tightly, then simmer for 30 mins until the chicken is tender. Uncover and increase the heat for about 5 mins to reduce the sauce a little. Sprinkle with parsley and serve with lemon wedges for squeezing over.

I added some tomatoes to this recipe and reallly makes difference by balancing out the flavours so they're not to overpowering. My boyfriend I thought it was delicious!

I found this a bit less flavoursome that I would expect a tagine to be - the five a day tagine on this site is much tastier. This may be because hardly there was hardly any liquid in the pan so I added a bit more water, even so there wasn't much sauce to speak of.

Very tasty with chicken thighs, very simple and easy to make after a busy day at work. Even the children enjoyed it (age 3 & 1) which is becoming a rarity!

I added a few extra bits as per the advice in the comments like garlic etc. I swapped the carrots for parsnips to use them up and it turned out really well.
I also sprinkled some pumpkin seeds into the pan a few minutes before serving to add texture and extra nutrients.

this recipe went down well with the family, I kept to the recipe,my daughter was visiting with young grandsons,they loved it,my stock went up no end with this dish, will definitely do this one again.,

A little sweet for me so would use less honey next time. Also added cumin and cinnamon which really added to the flavour.

I made this with chicken breast and veg stock and ate it with rice, was so nice and filling and EASY :)

Very nice but needs tweaking. Rubbed the chicken with ground cumin and turmeric, added garlic, chilli flakes and chicken stock into the pan after frying the chicken and served with brown rice. Very nice and spicy.

Delicious- i couldnt find tumeric in shop so i used paprika instead I also added potatoes and sweetcorn at very end, filling meal.

This is a great crowd pleaser, made it for entertaining with adults and with the kids. I added cinnamon and cumin which added to the flavour. I make it with half chicken breast and half thigh.

Served with lemon couscous and a bowl of salad makes for easy entertaining.

I read others comments and used chicken breasts, added stock not water and also cumin. It looked better than it tasted. It was OK but won't make it again. Husband not keen either.
