Easy chicken tagine

Simple one-pots are perfect for the busy cook. This chicken tagine is great eaten with cous cous for something a bit more filling

Method

  1. Heat the oil in a large, wide pan with a lid, add the chicken, then fry quickly until lightly coloured. Add the onion and ginger, then fry for a further 2 mins.
  2. Add 150ml water, the saffron, honey and carrots, season, then stir well. Bring to the boil, cover tightly, then simmer for 30 mins until the chicken is tender. Uncover and increase the heat for about 5 mins to reduce the sauce a little. Sprinkle with parsley and serve with lemon wedges for squeezing over.

Tip: chicken breasts

You can make this dish using 4 boneless, skinless chicken breasts instead of thighs. Simply cut them in half and reduce the simmering time to 15 mins.

    fabulous - easy to prepare and cook. Kids loved it (ages 1.5 & 3). I just added 3 cloves of garlic and vegetable stock. Carrots were divine.

    Hello. I have noted the comment made by Bellissimo about adding veg stock. How much would i add and when would i add it in. Could i also use chicken stock if i had no veg stock left?

    This was delicious, will definitely be making it again. I followed Michael's suggestion of adding cumin and cinnamon, about half a teaspoon of each. I was fairly generous with the honey, and just squeezed a lemon and stirred in the juice at the end of the cooking time. Served it with some wholegrain couscous I found in one of our well-known supermarkets. Brilliant.

    I have made this a few times now and it is delicious, the chicken and carrots are so tender. I will try it with the cumin and cinnamon when I cook it next time.

    I added raisins, cumin and garlic to the dish but it was still a bit bland. very easy to make though so will probably try again with the stock and more flavour. the raisins definitely made a nice addition.

    I cooked this for me and my partner and we both loved it! The only thing that we would change is use Chicken breasts instead but other than that the flavours are lovely.

    Nice low fat solution, served it with couscous. My only issue was that it turned out a little sweet for my tastes, so I'll just go easy on the honey next time.

    much tastier than i expected. Main flavour i found was ginger (but i may have gone a little over board when grating!). Served with mash which to my suprise worked well.
