Tomato & thyme cod

Ready in 20 minutes and low fat, this fish dish is great for a Monday night when you'd rather be on the sofa than in the kitchen

If the fish was not previously frozen

Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.
  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

The sauce for this dish can be made up to a day ahead. Simply cool and chill until ready to reheat.

    This was very easy, very quick and very tasty. It could have done with a little more sauce, but otherwise great. I served it with new potatoes and broccoli and felf good that my dinner was so healthy for a change!

    Agreed, this will totally win over anyone who has a dislike for fish. Also super cheap if you use pollack, and if you let the fish flake up and break into pieces it mixes in nicely with the sauce and no one would know the difference. I would recommend putting some sun dried tomatoes in too, makes it even more tomatoey!

    I made this dish last night, using haddock, it was delicious! The fresh thyme made it fresh. Served it with a side of Jasmine rice. My husband enjoyed it so much & was happy I doubled the sauce recipe. He has requested we have it again soon! Have shared the recipe with all my friends.

    Very tasty and light - i used sauce for meant for 4 people for 2 and used dried Thyme. Seved with new pots and green trees! Yum but so are a lot of recipes of here!

    Delicious and easy. The sauce was really great, I'd never thought of putting soy sauce in a tomato sauce like this, though I always add a little sugar. I also put in a few capers, really nice. Served it with a nice crusty french stick and salad. Lovely healthy dinner!

  • 1 heaped tsp light, soft brown sugar
  • few sprigs thyme , leaves stripped
  • 1 tbsp soy sauce
  • 4 cod , fillets (we like No Catch) or another white flaky fish, such as pollack
