Tomato & thyme cod

Ready in 20 minutes and low fat, this fish dish is great for a Monday night when you'd rather be on the sofa than in the kitchen

If the fish was not previously frozen

Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.
  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

The sauce for this dish can be made up to a day ahead. Simply cool and chill until ready to reheat.

    mmm this was lovely!!!! Cooking without garlic is unheard of for me :) I did, at first make the sauce without it, but found it alittle to sweet. I re-read some comments & decided to do what I should of in the first place, add garlic. Much nicer, I think. I used Pollock as Cod is to expensive, it was a lovely dish & I will make again & recommend

    We didn't think that this recipe was anything special. It's good for an every day mid-week meal, a standard cod in a tomato sauce dish. There wasn't enough sauce for 4 people so if i were to make it again then I'd increase the sauce ingredients.

    Brilliant brilliant quick recipe and so quick to make, yet looks so impressive on the plate. I cook the fish for 4-5 mins each side, that way when you turn it over a small amount of sauce sticks to the top and looks very good - just like the photo. Just a couple of variations - I use dried thyme for convenience and didn't cover the pan as we don't have a lid, and it works just fine. I also use this amount of sauce for 2 people, to be honest I'm not sure it would be enough for 4! Very tasty served with baked sweet potato :)

    Made this last night and was delicious! Good comfort food and will do well for winter nights. I added mushrooms to bulk it up a bit, and used a Herbe de Provence mix instead of just thyme. Also added a clove of garlic to enhance the tomato taste.

    Fantastic recipe- so tasty, leaves fish really moist. Very simple to make and delicious. Good one to make and put half in the freezer. Or, just freeze sauce to make more quickly in the future. I am going to try this with other white fish in the future. But it has become a firm family favourite very quickly.

    Yummy! I used defrosted coley fillets which were good with the sauce. Served with kale and boiled potatoes. Nice and healthy Friday fish dinner!

    Fantastic simple and full of flavour I would add a little more seasoning but thats down to individual taste . The only thing I found was that the fish started to break up I had it cut into long rectangles it would hold better in thicker portions to keep its shape . A fantastic dish a real hit with all the family .

    Receipe was nice but you couldnt really taste the fish. This is good for the other half who doesnt really like fish but a bit of a shame for me. Was a little bitter so added extra sugar.

    We really like this! After I make the sauce, I add some sliced mushrooms and zucchini (courgette) and let them cook until they're just about done. Then I add the fish and serve it with rice and a salad.
