Tomato & thyme cod

Ready in 20 minutes and low fat, this fish dish is great for a Monday night when you'd rather be on the sofa than in the kitchen

If the fish was not previously frozen

Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.
  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

The sauce for this dish can be made up to a day ahead. Simply cool and chill until ready to reheat.

    Absolutely delicious, used lemon thyme and there were little bursts every now and then which was against the fish was sublime, served with steamed potatoes, tenderstem brocolli and spinach, I think I will make this a regular dish! And I am not a fish lover at all! :)

    Great receipe - will definitely be making it again and trying out different fish. I used cod from frozen and just simmered it for slightly longer so this is a great store cupboard option as well as very tasty.

    Not sure what people are raving about. I found this to be bland and boring. Wont be making it again. The best bit were the sauteed potatoes i made to go with it.

    Tried this last nite & after looking at other comments decided to add a bit more flavour incase it turned out too bland! I added 2-3 crushed garlic cloves and one red chilli finely chopped to the oil for couple of minutes bfr adding the onion just to infuse the flavour but other than that followed the recipe exactly and it turned out lovely!! really simple to make & healthy too!! will defenetly be using this again - might try it with chicken pieces aswell next time! :)

    So simple yet very tasty. Made this when I had cod in but didn't know what to do with it. The fact that I had the rest of the ingredients in the cupboard was such a bonus. The fish was cooked beautifully.

    To spice up this dish, I sometimes add a sliced red chillie when frying the onions. This has become a fav, and a quick mid week dinner dish.

    So simple, yet really tasty. I made double the sauce though, as I knew one tin of toms would not be enough for 4 pieces of fish. As others suggested I serve with brown rice and vegetables.

    I made this last night, and added some finely chopped Chorizo and a small chopped red bell pepper. Absolutely fantastic, the Thyme really does add a special taste. Served with steamed sprouting Broccoli, the whole family loved it (even my 4 yr old daughter ate the lot ). I make a sauce like this to go on pizza bases, but normally would use dried Oregano.The Fresh Thyme really does make all the difference. The food looked really pretty too, when plated up.

    I add chorizo to the sauce at the start and blanched green beans towards the end and serve with rosemary parmentier potatoes to make this a complete meal.

    Made this last night and was very easy and quick to make - definitely one for a weeknight. Possibly not needing the sugar in the sauce as I find tinned toms reasonably sweet anyway.

    I did this a week ago as per the recipe and it was fabulous. Had some cod again this week so i tweaked it a little, omitted the thyme and put in a teaspoon of fennel seeds and a couple of wedges of lemon which made a nice change. Served it with garlic roasted baby new potatoes. Super easy recipe for in the week, throw everything into baking trays and let it do it's thing.
