Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 400g can chopped tomatoes
  • 1 heaped tsp light, soft brown sugar
  • few sprigs thyme, leaves stripped
  • 1 tbsp soy sauce
  • 4 cod, fillets (we like No Catch) or another white flaky fish, such as pollack

Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.
  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

Made this loads and it's always a winner. Mostly serve with couscous and veg and always add some chilli to add a bit of a kick.

So simple yet very tasty. Made this when I had cod in but didn't know what to do with it. The fact that I had the rest of the ingredients in the cupboard was such a bonus. The fish was cooked beautifully.

Tried this last nite & after looking at other comments decided to add a bit more flavour incase it turned out too bland! I added 2-3 crushed garlic cloves and one red chilli finely chopped to the oil for couple of minutes bfr adding the onion just to infuse the flavour but other than that followed the recipe exactly and it turned out lovely!! really simple to make & healthy too!! will defenetly be using this again - might try it with chicken pieces aswell next time! :)

Not sure what people are raving about. I found this to be bland and boring. Wont be making it again. The best bit were the sauteed potatoes i made to go with it.

Great receipe - will definitely be making it again and trying out different fish.

I used cod from frozen and just simmered it for slightly longer so this is a great store cupboard option as well as very tasty.

Absolutely delicious, used lemon thyme and there were little bursts every now and then which was against the fish was sublime, served with steamed potatoes, tenderstem brocolli and spinach, I think I will make this a regular dish! And I am not a fish lover at all! :)

A fabulous dish. Easy to make and enjoyed every mouthfull! I will be trying this with more sustainable fish in future however.

this is so simple and you can mostly use things from the store cupboard. I
I served with roasted new potatoes, adding some of the thyme and a couple of garlic cloves when roasting.
Perfect for a healthy new year mid week dinner.

I thought this recipe was very bland the sauce had no flavour to it and the fish was faaaar to fishy!! Was very disspointed and was looking forward to it all week :( :( :(

just made this for the boyfriend. I don't even think he chewed it, just breathed it in, but apparently went down a storm, and have enough for leftovers for tomorrow!

I absolutely loved this recipe so quick and tasty will def be serving this again. I also used same quantity of sauce for 2 persons and as suggested added green pepper, lemon thyme and a few sliced black olives a couple of mins from the end so not to overpower the sauce.
I served with rice and steamed broccoli. A new favourite i think!!

i cooked this tonight and it the sauce was delicious but i added a little chilli, basil and oregon to give it some flare with noodles on the side, i would definately cook this again!
