Tomato & thyme cod

Ready in 20 minutes and low fat, this fish dish is great for a Monday night when you'd rather be on the sofa than in the kitchen

If the fish was not previously frozen

Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.
  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

The sauce for this dish can be made up to a day ahead. Simply cool and chill until ready to reheat.

    One of the best fish recipes I have made. Tasty and easy to make as well as low in calories!!! Have made 3 times and used haddock too which is just as good The fresh thyme is such a lovely fresh flavour!!

    A good way of getting my fish-phobic partner to eat fish, he even said he enjoyed it. Think it would be a good way of getting kids to eat fish too!

    Really tasty yet incredibly simple fish dish, using store cupboard ingredients. Perfect for a very healthy meal when you're in a rush. I serve it with wholemeal rice and watercress/rocket salad.

    This sauce is great and so easy. We used Vietnamese River Cobbler fish from Tesco. It's farmed in the UK.

    This was delicious. I made a large batch of sauce and froze half. We used haddock instead of cod and lemon thyme instead of the usual. The lemon taste lifted the sauce to another level.

    We have made this recipe twice now and all the family enjoy it. I served it with steamed new potatoes. We all love it and has become a family favourite that is very quick and easy to make after a day at work.

    I'm not usually keen on a lot of onion, but I decided to go for it and was pleasantly surprised! It was very easy to make and very tasty. Served it with oven chips and broccoli.

    I made this for the first time early last week and it was a huge hit! So much so that the following morning my husband emailed me from his office to say thanks for the fantastic dinner last night and please will you make this again on Friday? That really made me laugh! This is so easy to make and so very tasty. The first time I made this I followed the recipe exactly, using cod and served it with baked potato and some broad beans. The second time I used haddock and it was just as brilliant - served with baked potato and runner beans. I like lostlat's idea of serving this up with rice and will give it a try.

  • 1 heaped tsp light, soft brown sugar
  • few sprigs thyme , leaves stripped
  • 1 tbsp soy sauce
  • 4 cod , fillets (we like No Catch) or another white flaky fish, such as pollack
