  1. Cook the potatoes in boiling salted water for about 15 mins until completely cooked through. Peeling the potatoes isn’t essential, but I think it gives a smoother finish to the dish.

  2. Drain, tip into a bowl, and crush with the olive oil until broken but not mashed. Stir through the spring onions and the olives, then season to taste and serve.

Omitted the olives and didn't use olive oil, 1 tbsp of salted lurpak light instead and it was delicious, also served with the quick braised lettuce and peas

Great idea for sprucing up the boring potato! I tried it with the spring onions and it was delicious! I have had them again since and fried a little garlic and onion in some olive oil until softened and then added them to potatos with a little butter before crushing! Really great little side dishes!

This is such an easy side dish and it tasted fab. I missed out the olives and used a little butter instead of oil as thats what i had in but it was really lovely so will make again for sure!!

I did this today without olives and with butter instead of olive oil, to go with a pie.

It's a simple, excellent change to boring old new potatoes... you can't go wrong, really (unless you mash them a little too much).
