One-pan salmon with roast asparagus

For an easy side dish to complement a spring roast, just cook this recipe without the salmon

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

    I added some garlic to the spuds which I think it needed and I also used up a few mushrooms that I had lurking in the fridge but the basic recipe is beautiful without much tweaking. We also had ours with 2 side dishes of fresh runner beans with grated parmesan and also half a chopped avocado with a squeeze of fresh lemon. The Balsamic Vinegar in this dish works incredibly well at bringing out all of the gorgeous flavours It was absolutely divine and one that I shall be cooking a lot over the summer!

    This recipe is amazing , infact I am making it as I type and I know it will be as delicious as it always is . I like to add a few boiled eggs and some sugar snaps, just for a bit extra. And it always goes down a storm in my house .

    I love this dish, my fav that i've cooked on here. once i put the asparagus in i actually brown the fish b4 i put in the pot, i use lightly smoked salmon m&s does it and sainsburys too, makes it extra tasty plus i leave it in the oven around 10 mins longer makes it combine better.

    Cooked this exactly as stated and absolutely loved it. Stuck to the quantities, didn't have any side dishes or extra and found it to be really filling! TasTed healthy but very satisfying. We will definately be having this again soon.

    Just made this, was looking forward to it - thought it sounded very nice and had lots of good reviews but was slightly dissapointed. Seemed to lack flavour despite the balsamic and basil. Was certainly easy to make and was not unpleasant but don't think I'll be making it again.

    Made this with old pots cut small and ordinary tomatoes cut in quarters had some reduced balsamic vinegar and it was lovely. Will do this next time I entertain some fish lovers.
