One-pan salmon with roast asparagus

For an easy side dish to complement a spring roast, just cook this recipe without the salmon

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

    A lovely easy dinner - although I agree that the tomatoes and asparagus definitely don't need that long to cook. I did them for 20mins and they were still a little on the caramelised side :-) The potatoes were a little dry so I may trp a lemon butter sauce on the side next time. Definitely will be cooking this again!

    I made this for a healthy Friday night supper and added peppers and mushrooms in with the tomatoes. It was delicious! don't be afraid of splashing on the vinegar and the olive oil to stop the extra ingredients drying up!

    It definitely does not need to cook as long as stated, I added the asparagus, tomatoes and salmon at the same time, with a bit extra oil and balsamic. A delicious meal that has become a favourite.

    Delicious! I forgot the basil and it was still lovely, with the basil it would be even better. Really easy to make, only thing I would change is to pan fry the salmon first just to crisp the skin a bit. Will definatly be doing it again soon.

    This recipe is fabulous. I would agree with others that the asparagus does not need so much cooking. I also added mushrooms and garlic. Served with lemon and garlic mayonnaise just finishes it off nicely.

    Used the basic idea with a whole salmon trout to serve more and it was fantastic, tasty and so easy. Especially if you need to be somewhere else than in the kitchen for a party!

    Oh my goodness, this is so delicious! I made it with smoked salmon fillets plus a cod fillet as my son prefers cod to salmon. I also added in sliced courgettes and aubergines along with a touch more olive oil and balsamic vinegar. The juices spooned over the fish and potatoes were divine. A big hit in our family!

    What a great dish! I don't like any sort of vinegar so swapped it for lemon juice and increased the amount to 3tbsp. Thanks to those who suggested cooking the aparagus for less time,I think 30mins would have been too long. Have also tried it with garlic and yellow pepper added and served it with tenderstem broccolli or crusty bread to mop up the lemony juices Give it a try it's delicious!!

    This is a delicious dish. The richness of the salmon (or ocean trout - which is equally good) is balanced very well by the cherry tomatoes and balsamic vinegar and having the whole meal cooked in one dish is fabulous! Wouldn't change a thing.
