One-pan salmon with roast asparagus

For an easy side dish to complement a spring roast, just cook this recipe without the salmon

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

    Really lovely dish - for those suggesting its bland can I suggest extra balsamic & ensuring the tomatoes are cooked until there juiced run - I kept some whole % halfed others this added to the sauce I also used a lot of black pepper

    Very quick and easy although timing is important I started to burn my salmon so i wrapped it in tin foil and it was fine, definitely will make it again.

    Yum-tastic! The recipe didn't call for seasoning but next time I'll add both salt and pepper, especially to the potatoes. The amounts are modest so this meal would be good for dieting or adding a starter and dessert to. Alternatively you can increase the portion sizes which I'll do next time. It's a real low maintenance meal so good if you're busy. Delicious!

    I cooked the potatoes for 20 mins in garlic oil, then added fat asparagus and 2 inches of chopped chorizo for 10 mins. Seasoned salmon with black pepper and lemon juice whilst waiting for timer. 10 minutes more for salmon and toms to cook. Salmon was over cooked but delicious!

    Just made this for an easy Saturday night meal. Yumma. Listening too other comments I reduced cooking time of asparagus + tomatoes. Didn't have any basil so added rosemary to potatoes before adding salmon. Also added 2 tablespoons of Balsamic.

    This is an insanely delicious recipe, now made for the second time. I used lots of ground black pepper and salt. For the oil I used one tablespoon of garlic-infused olived oil to roast the potatoes, and then a tablespoon of basil-infused oil to drizzle over the fish. Really good recipe, definitely a keeper!
