One-pan salmon with roast asparagus

For an easy side dish to complement a spring roast, just cook this recipe without the salmon

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

    Fantastic meal, full of summer flavours. Perhaps admin team could changes cooking time to 1 hour, rather then 1 min, could confuse some of the readers.

    Really beautiful recipe! It has made salmon a spectatcular dish when previously I always thought it was a bit bland and uninteresting! The balsamic vinegar is also a star in this dish and an inspired addition!

    Lovely recipe. Ideal for a one person, easy and healthy supper (half the recipe of course). I think my asparagus were far too thin to be roasted for 20/30 minutes though so trying again and leaving the asparagus until the salmon and tomatoes go in. Will make again!

    Loved the idea of only one pan and the meal was delicious but felt that the asparagas should be added nearer to the end of cooking time. Otherwise full marks.

    Tried this recipe at the weekend. Read some of the comments before hand so added a small roughly chopped onion and a chopped garlic clove with the potatoes. I also seasoned and added a little more balsamic. The salmon was superb, as was the overall flavour. I added the asparagus at the same time as the tomatoes but it needed a bit longer so next time I will follow the recipe. Also, next time I will parboil the potatoes. This dish definitely gets the thumbs up!
