One-pan salmon with roast asparagus

For an easy side dish to complement a spring roast, just cook this recipe without the salmon

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

    Delicious! I added a clove of garlic and a red chilli, carrot and courgette and shallots, but didn't use tomatoes or potatoes. Served with tomato couscous, it was very filling and simple to make.

    Delicious! I added garlic, a red chilli, courgette, carrot and shallots, leaving out the potatoes and tomatoes. Served with tomato couscous, it was very filling and simple to make.

    Delicious! As the asparagus season is over I made it with courgette and aubergine instead. The cherry tomatoes were very tasty. I shall make it again.

    Quick easy meal, made after work with minimum fuss. Tasted so lovely and summery. Had it with some crusty bread to mop up all the gooey roast tomato/ vinegar juices. Delicious!

    Clean plates and dish so this must have been good, plus no moaning about who was doing the washing up. Great for a mid week meal, but it is not something I would serve for a dinner party, as a bit too simple :O)

    Quick and easy to make and very tasty, I used broccoli instead of asparagus and I also added a couple of garlic cloves in their skins with the potatoes to give extra flavour.

    Loved this. Might reduce the timing when the asparagus and tomatos go in as they were too well done for us even though my asparagus was chunky. Will definitely make this again and tweak it to suit us.

    This is such an easy dinner to make. It is also very healthy and tasty. I use fry light instead of the oil as I am on slimming world, but it still takes fantastic.

    Great! Very simple to do and tasty. I added courgettes with the asparagus and served with cauliflower cheese. Not much washing up to do either so rather happy with this recipe!

    We tried this last night and is was very tasty. We added a quartered red onion to the potatoes but did not have any basil so that was omitted. Nevertheless this will be a regular addition to our weekly meals.

    If you love salmon & asparagus do try this as it is sheer heaven! Really simple & quick to make but very impressive and it tastes amazing. I added a handful of black & green olives for a more Mediteranean slant & the juice of half a lime added a little tartness which complemented the salmion perfectly. Served as it was with a side salad of mixed rocket & watercress it was a lovely Saturday night meal for 2 which earned lots of brownie points! Serving it for friends next weekend as it is so impressive with so little effort!

    Very tasty and extremely easy to make. Impressed my husband too, and that's not easy to do with a fish dish. Have made a few times, also with variations, such as adding peppers. Would cook this for friends too.

    Really great recipe, I added mint instead of basil at the same time as the salmon, with a few dashes of lime juice and some caramelised red onion chutney with balsamic and a bit of sherry vinegar with a pinch of sugar. I served it with crushed minted peas. Perfect meal!
