One-pan salmon with roast asparagus

For an easy side dish to complement a spring roast, just cook this recipe without the salmon

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

    Easy to prepare but I wouldn't cook the asparagus for quite as long and I'm not sure that the tomatoes added anything but colour to the dish. I thought that the flavour lacked a little something even though I used the best ingredients . I will try making it again but without the tomatoes and using a little chorizo and some chopped peppers.

    The roasted asparagus, new potatoes and cherry tomatoes were really lovely with the flavour of balsamic vinegar and fresh basil, but I felt it was too difficult to get everything cooked perfectly timing-wise once the salmon was thrown into the mix. (I ended up overcooking the veg waiting for the salmon to cook through.) I would definitely serve it as a side dish again, but next time I would do the salmon separately.

    Made this when my two good friends came round and it turned out brilliantly. I don't cook because usually it all goes round! This was easy but effective. Looked and tasted fabulous!

    I cooked this today, I added mushrooms, and half a courgette. Also we didn't have any new potatoes so did roasted instead. It was a delicious meal and will definitely have it again.

    This was fantastic. I crushed some peppercorns and put them on the Salmon, then soaked the fillets in the juice of half a lemon for about 10 minutes. Also added about half the juice to the bowl with the balsamic - it seemed to work well, the salmon was moist and juicy. Will be doing this again; the cherry tomatoes are an awesome touch.

    I made this tonight for my husband and 8yr old daughter. I substituted the salmon for chicken breasts. I put them in the pot with 25 minutes to go. I also put some green beans in the pot at the same time as the asparagus. We all enjoyed this meal and it is a bonus that there are very few dishes. Definitely be making this again.
