One-pan salmon with roast asparagus

For an easy side dish to complement a spring roast, just cook this recipe without the salmon

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

    Takes some time, but very easy to make. And also important almost no washing-up. ;-) Taste very good. Though i like to ad some spices and seasoning. For example spread some horseradish onto the Salmon.

    Very easy to make, used Tesco's microwave potatoes with herb butter (not cooked in microwave but cooked as per instruction). Also poured vinegar over salmon and it tastes excellent. Will definately use this recipe again.

    I'm not a massive fan of Stilton, but made this as a way of using up some that was left over from crimbo. What can I say- this recipe couldn't be any easier, and something magical happens to that cheese when you put it in this soup- it makes it so creamy and tasty- no seasoning required! Will definitely make again.

    This wsa delicious! Bought salmon to cook a spicy salmon recipe I had done previously When searching for the recipe found this one and by chance had also bought some reduced asparagus so it seemed meant to be! I took account of comments made previously and added the asparagus about five minutes before the salmon and tomatoes, and was generous with the balsamic. So easy, so delicious, and easy on the washing up! Will definitely do this again and may even add basil next time (didn't have it in but the flavour didn't seem lacking because of this) Try this - you won't be disappointed.

    Fab - cooked it a few times now for myself & my husband who normally doesn't particularly enjoy fish. So easy, mess free and incredibly tasty. Deffo highly reccomend. Always add extra cherry tomatoes & apsaragus as extra calorie free filler!

    Made last night, loved it! One of the easiest and flavoursome meals i have made. Will definately be doing again. Doesnt really need to be served with anything but a nice bit of crusty bread and butter to soak up the sauce goes down well.
