  • 2 salmon fillet, about 140g/5oz each
  • handful basil leaves

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.

  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

This is a great and very easy recipe. Made this for lunch and it was absolutely heavenly. I used chopped salad tomatoes instead of cherry tomatoes as I didn't have any cherry tomatoes.

I added 3 tbsp of olive oil instead of 2. I also added salt, pepper, oregano and mixed herbs. Delicious!

Made this for dinner this evening and thoroughly enjoyed it, as did hubby who can be a fussy eater. I added a few chunky carrots with peeled potatoes in wedges as I didn't have new potatoes, the timing was perfect as everything was cooked to perfection. Will definitely do this one again, thanks for sharing :-)

I seasoned the potatoes with garlic, salt and pepper and added a chopped courgette at the same time as the asparagus which worked very well. I also squeezed 1/4 of a lemon when adding the salmon and cooked 1/4 lemon between the pieces of salmon which I squeezed over before serving. I was very generous with the balsamic and my other half also added a splash of soya sauce. It was yummy and excellent for a novice like me. Will be making again.

Easy, simple and delicious. Perfect for when your short of time but wanting something tasty and healthy. Even got a fussy twelve year old eating asparagus thanks to the balsamic vinegar which he loves. Like many other reviews, I added extra balsamic and halfed the tomatoes - will add extra asparagus next time as it now gets fought over in my house. Easily doubled or quadrupled for fuss free entertaining.

Really, really simple and easy to put together. I had a few shallots in the fridge so threw those in with the potatoes. This is one we will definitely repeat over and over again.

Absolutely gorgeous! I added some red onion at the asparagus stage and it was lovely and sweet at the end. I would double or treble this and do for a dinner party, just superb.
I added a sprinkle of salt as I think it needed it, and when I served it I added some horseradish on the side which added a lively kick.

Really enjoyed this dish, although I cut the cooking time down. I cooked the potatoes for 20 mins, then added everything else for 15 mins. Tasty.

A beautiful summery one-pan fish dish that is so simple to prepare. Just throw everything in the pan at stages and you have a lovely healthy dish at the end of the 50 mins cooking time (not 1 min as stated!). Wish I'd added courgettes as per comments below - I had a couple to use up!!

Made a change from my usual ways of serving salmon, and very easy. I added an uncrushed clove of garlic and seasoning to the new potatoes. My son thought looked this looked like a restaurant cooked meal! Served with a side salad. Will make again, maybe using courgettes and peppers when asparagus is no longer in season

This is an insanely delicious recipe, now made for the second time. I used lots of ground black pepper and salt. For the oil I used one tablespoon of garlic-infused olived oil to roast the potatoes, and then a tablespoon of basil-infused oil to drizzle over the fish. Really good recipe, definitely a keeper!

Just made this for an easy Saturday night meal. Yumma. Listening too other comments I reduced cooking time of asparagus + tomatoes. Didn't have any basil so added rosemary to potatoes before adding salmon. Also added 2 tablespoons of Balsamic.
