Parsnip mash with apple

Finnish your meal with this splendid side dish. Perfect with pork chops or sausages

Method

  1. Cook the parsnip and apple in a pan of salted simmering water for 10 mins until tender, then drain. Put the pan back on the heat, add the butter and spices, then cook for a few mins before adding the milk and warming through.
  2. Add this to the parsnips and apple, season well then whizz in the food processor until smooth, or mash well by hand. Spoon into a bowl and drizzle with a little melted butter to serve.

    A fairly delicious alternative to mash potato. I would however say that you should add the milk slowly as ours was a little watery

    I took the comment above from RachelSC and drained the parsnips and apple well, I reduced the milk to 50ml, whizzed it in a processor to ensure it was lovely and smooth... it was really quite delicious with a pork sausage casserole.

    Didn't have a food processor, but a hand blender worked fine. Served with flavoured boiled cabbage (http://www.bbcgoodfood.com/recipes/1687/flavoured-boiled-cabbage) for lunch and the alternative mash went down really well.

    I was a bit nervous about this but it worked well with the Hand and Spring of Pork, I would recommend for pork roasts, compliments well and lovely flavour.
