Fromage frais mousse with strawberry sauce

This low-fat dessert has a wonderfully light and airy texture, and it's suitable for vegetarians too

Method

  1. Put the egg white into a heatproof bowl with the icing sugar. Set the bowl over a large pan of simmering water and, using a hand electric whisk, whisk for 5 mins until the mixture is light, fluffy and holds peaks when the blades are lifted. Remove from heat, whisk in the lemon zest, then whisk for a further 2 mins to cool it down.
  2. Fold in the fromage frais, then transfer to six glasses or small bowls and chill. Roughly chop half the strawberries and put in the food processor with the 2 tbsp icing sugar and the lemon juice. Whizz to a purée, then press through a sieve to remove the seeds. Chop the remaining strawberries.
  3. Spoon the chopped strawberries over the mousses, then spoon a little purée over each. Chill until ready to serve.

    This was quite easy to make but I made it lunch time for our evening meal and found the bottom of the mousse had started to go runny....was it anything I did or didn't do? We also found the strawberry sauce too sweet, perhaps it didn't need the sugar.

    Made it yesterday. Used 2 medim egg whites instead of 1 large, and whisked only 2 1/2 minutes in the bain-marie : the meringue was getting dry and sticking to the sides. Used only 1 tbsp icing sugar for the coulis. And lime juice instead of lemon. Absolutely perfect. Easy, quick, low-fat, nice to the palate and the eyes, light and airy texture just as advertized, in short just perfect!

    How long does this take to set? I left it overnight and it had the consistency of the fromage frais! So I don't think I did the egg whites for long enough over the heat so tried again and melted my hand whisk in the bain marie!

    Me and my partner didn't like it. Very very sharp and lemony. Should be called lemon mousse as that is all I could taste. Not sure where I went wrong! Sauce was lovely though, would definitely make that for low fat ice cream.
