Method

  1. Heat the oil in a deep saucepan, then soften the onion for 4-5 mins. Stir in the curry paste and cook for 1 min more until fragrant. Add the grated sweet potato and stock, then bring quickly to the boil, simmering for 5 mins until the potato is tender.

  2. Remove the soup from the heat, stir in the coconut and seasoning, then cool briefly before whizzing with a stick blender until smooth. Sprinkle with coriander and serve with warm naan breads.

I've made this soup several times, and portion it up for the freezer to take into work. It's so delicious and creamy - I'd suggest adding some fresh chilli and turmeric to give it a bit more zing and even more nutritious goodness. I also dice the potatoes, grating isn't necessary!

Really enjoyed the flavour combination of sweet potato, Thai curry paste and coconut milk. Admittedly I didn't follow the recipe as I wouldn't say that grating all those potatoes would be speedy! I just chopped them up into chunks, and I used a whole can of coconut milk as the remainder would have gone to waste otherwise, but it tastes delicious! Would make again for something different when I fancy soup.

You can freeze coconut milk. I buy full
fat and use half with half tin of water and freeze the other half.

Really liked this, though it came out a bit too thin for my taste, so next time I'll reduce the amount of stock and maybe chop the sweet potatoes, since grating them takes FOREVER

Delicious soup and very speedy if you shred the potatoes with a food processor. It was just what we needed on a chilly autumnal evening. It has a lovely smooth texture and is full of flavour thanks to the curry paste. I used a full can of full fat coconut milk (because I didn't want to be left with half a can) and just adjusted the stock quantities accordingly. I'll be making this again.

Very tasty soup. I omitted the Thai curry paste, to appeal more to younger eaters. I also used a full can of coconut milk and 700ml of stock, instead of the 1l recommended. I roughly chopped the sweet potato; I didn't grate it.

Very simple and easy to prepare winter warmer. Should only take most people 20mins with prep time. Would hope most people can grate a sweet potato whilst onions are softening! Only change i would make would be to reduce amount of stock and probably add a full can of coconut milk for a thicker and creamier soup.

Just made this soup and don't have a bad word to say. It is delicious, I did follow what others said below, dicing and simmering the potatoes for 15 mins in the stock instead of grating them, and I used light coconut milk to be a little healthier, but this comes out beautifully!

Absolutely delicious. Very easy and quick. I followed the recipe to the letter, following the advice on here not to bother grating the potatoes, rather dicing them. Worked brilliantly. Perfect warming soup for a winter's evening.

Really delicious! I chopped the sweet potato into chunks rather than grated and bubbled it away for 15 minutes instead. I also added some garlic, some chilli powder and lots of black pepper to add some extra warmth.

Just remembered this fantastic recipe! I use a food processor to chop the onion and grate the potatoes so it couldn't be easier.

In what world does this take 20 minutes to cook?! Took me 20 minutes just to grate the potatoes - don't bother, just chop them into small chunks and simmer for 10-15 minutes more.

I don't think you can really go wrong with this great soup. As long as you have that lovely combination of sweet potato, coconut and spice, it'll work. I've made it various times with whatever spice pastes are lurking in the fridge if I haven't got green curry available, plus splodges of mango chutney etc. You can really play around with the level of spicing, type of coconut milk/cream and the consistency to suit yourself. As others have commented, don't ever bother grating the sweet potato, (why would anyone go to that trouble for veg destined for the blender??), just chop, cook till tender and whizz.

Really yummy. Following comments on here I reduced the stock by 100ml but it was still a thick soup, will use full amount next time. Great little recipe, very quick with a food processor.

Absolutely delicious soup! If you don't have a food processor don't attempt to grate the sweet potatoes by hand - total nightmare - just chop them into small pieces and cook for 10-15 minutes longer :-).

Love this soup! Have made it many times now and it never fails. It's really easy, quick and full of flavour. I don't use as much stock as I like a thicker soup but otherwise I've no other tips for it. Occasionally throw in some carrot and garlic too for added flavour. Defo a winner in our household

Lovely! Used coconut milk powder made into cream, extra red curry paste, chicken stock and blended the coriander too.

I'm planning on making this soup tonight (and will dice, rather than grate). Should I peel them beforehand? When I normally cook with sweet potatoes I just keep the skin on, but I've never made a soup using them before. Any advice/tips greatly appreciated!!

Dicing instead of grating is fine, but I would peel the skin of the sweet potato, as this soup should be as smooth as possible.
