Speedy sweet potato soup with coconut

Method

  1. Heat the oil in a deep saucepan, then soften the onion for 4-5 mins. Stir in the curry paste and cook for 1 min more until fragrant. Add the grated sweet potato and stock, then bring quickly to the boil, simmering for 5 mins until the potato is tender.
  2. Remove the soup from the heat, stir in the coconut and seasoning, then cool briefly before whizzing with a stick blender until smooth. Sprinkle with coriander and serve with warm naan breads.

    Great soup, went down great with the family. Its a bit like Chicken Korma with a subtly kick! You could even use it as a sauce over chicken with some rice!

    Gorgeous...nice and sweet, aromatic and with a wee bit of a kick thanks to the curry paste (I used Thai Green this time). Don't bother with grating the sweet potato, just chop into chunks as it all gets whizzed up at the end!

    Lovely recipe- I was looking for a simple soup recipe, as I'm new to cooking them. I like the flavours, but I think it needs another teaspoon of curry paste (I used red) and some seasoning. I am going to try this as an alternative to a korma sauce, it's so delicious :) I also used dried coriander and it worked just fine- put in two generous teaspoons full.

    This soup is gorgeous. I didn't have any curry paste so I used lazy ginger paste instead. I too, cut the sweet potato into chunks and cooked it in the microwave, much quicker and since I haven't tried it the conventional way I can't say if it tasted any better.

    Brilliant recipe, added slightly more paste than recommended because we like it spicy. The only hassle is grating the potatoes but it is SO worth it! Ready in no time and tastes delicious.

    Once again, a fab soup from BBC Good Food. It's a blustery, cold, freezing rain kind of day here in Ontario, and this soup totally hit the spot. I doubled the recipe, as I usually do (put some away in the deep freeze), and added ginger and garlic. The coconut cream made it rich and creamy. Made a batch of corn bread, warm out of the oven. Yummy! A hit with the family.

    Great soup and would have served 6 rather than 4. First chopped onion in processor and then grated potatoes in processor, same bowl so very little washing up, all done in next to no time. It really is speedy but tasty too.

    Brilliant soup... different and tasty, didn't grate the sweet potato,(due to lots of comments..) cut up into small chunks, so much easier..mine turned out much "oranger" than the picture, more the colour of homemade tomato soup, still a very tasty soup, will be making more of this in the future. Defo needed 2 teaspoons of green Thai paste.

    Really simple and delicous. I didn't bother to grate the sweet potatoe and used a tikka paste instead of thai paste and its still good. Big thumbs up from me.

    Fantastic. Easy and incredibly tasty. A perfect starter or light supper. Will be making this as a freezer staple. I used a combination of small grated Sweet Potato and large grated - it gave the soup more bite.
