Speedy sweet potato soup with coconut

Method

  1. Heat the oil in a deep saucepan, then soften the onion for 4-5 mins. Stir in the curry paste and cook for 1 min more until fragrant. Add the grated sweet potato and stock, then bring quickly to the boil, simmering for 5 mins until the potato is tender.
  2. Remove the soup from the heat, stir in the coconut and seasoning, then cool briefly before whizzing with a stick blender until smooth. Sprinkle with coriander and serve with warm naan breads.

    A really lovely warming soup, I used green Thai curry paste although I would have preferred to use red, but green was all I had in the fridge and it worked a treat anyway. I added quite a lot more paste, about 4 heaped tsp, because I like my food spicy. It made perfect lunches at work throughout the week.

    I've just cooked this and will most probably make it again if I have sweet potatoes to use up. Although I used the exact ingredients stated, my version turned out a beautiful rich orange in colour, and required a half a tin of coconut milk for it to be evident in the soup... also needed a good pinch of salt.

    I was very excited to make and try this soup, as I love sweet potato and I love coconut flavours, and I was impressed, especially with dunking a naan bread in! I did find I had to season mine quite well though, as something just felt slightly lacking, but I think I may have overdone the coconut milk ( i used half a can) and uderdone the green curry paste ( i used 1tsp),so will alter quantites next time. Well worth it though, and a pleaser to kids too as its sweet and mild.

    Great soup- very quick and simple . Proves that you dont always need long lists of ingrediants . A winner . Double up the coconut though for a creamier taste and careful with the authentic Thai paste dont be tempted to be too generous .

    Lovely recipe, buit not sure how anything that involves lots of grating could be called speedy! I just cut the potato into chunks and cooked a few minutes longer, much quicker!

    This soup is so Nice, The texture is perfect giving a lasting taste sensation and yet amazingly not to filling. I made using approx 2 kg Potatoes, 4 table spoons red thai paste, and whole tin of reduced fat cocconut milk, I would like to freeze this but am unsure because of the coconut milk, Does anyone knopw if it's frezzable?
