  • handful coriander, roughly chopped
  • mini naan bread, to serve

Method

  1. Heat the oil in a deep saucepan, then soften the onion for 4-5 mins. Stir in the curry paste and cook for 1 min more until fragrant. Add the grated sweet potato and stock, then bring quickly to the boil, simmering for 5 mins until the potato is tender.

  2. Remove the soup from the heat, stir in the coconut and seasoning, then cool briefly before whizzing with a stick blender until smooth. Sprinkle with coriander and serve with warm naan breads.

Very speedy, very easy, extremely tasty. Only the 2nd time I'd made soup, so was very impressed. Used mild curry powder as didn't have paste. Used 1/4 Tin of coconut milk and Blitzed before serving. Added smoked bacon lardons to serve. Defo making this again.

Really tasty, like some of the others, I was born minus a desire for grating - so cut the sweet potato into chunks and let it cook that bit longer! Just as tasty!

Brilliant soup - fast, tasty and easy to make. Didn't bother grating the potato, just diced it to make this even easier!

Made this for lunch, used red thai paste and added extra. Delicious and very simple. Will make again.

Fantastic. Easy and incredibly tasty. A perfect starter or light supper. Will be making this as a freezer staple. I used a combination of small grated Sweet Potato and large grated - it gave the soup more bite.

Really simple and delicous. I didn't bother to grate the sweet potatoe and used a tikka paste instead of thai paste and its still good. Big thumbs up from me.

Very smooth, satisfying and tasty soup. Next time I want to try using just water instead of stock, as it was quite salty.
