  • half sachet creamed coconut (or ¼ can reduced-fat coconut milk)
  • handful coriander, roughly chopped
  • mini naan bread, to serve
  • 750g sweet potato, grated

Method

  1. Heat the oil in a deep saucepan, then soften the onion for 4-5 mins. Stir in the curry paste and cook for 1 min more until fragrant. Add the grated sweet potato and stock, then bring quickly to the boil, simmering for 5 mins until the potato is tender.

  2. Remove the soup from the heat, stir in the coconut and seasoning, then cool briefly before whizzing with a stick blender until smooth. Sprinkle with coriander and serve with warm naan breads.

Loved this, very easy to make, and full of flavour! I did give up on grating the sweet potatoes as my grater is rubbish. I grated around half and finely sliced the remainder, checking the potato was tender before adding the milk and seasoning! Will definitely be making this again!

Very tasty with a definite kick depending on how much paste you used. I did use nearly a whole can of full fat coconut milk and used part chicken/part vegetable stock. I disagree with the length of time to prep because preparing the potato and grating it took 10 minutes. Will definitely make again!!

Made this last week and it was really very nice. Added some butternut squash and extra curry paste for an additional kick. Tasted very complex & everyone loved it. Froze well too. Will be making again very soon.

Soups don't come any simpler or more delicious. I had no Thai Curry paste so I used Chipotle Chilli Paste (from Sainsburys) which adds a spice and glorious smokey flavour which compliments the sweet potato really well. Oh - and the soup freezes just fine, so you can make a bucketfull.

After the initial time spent grating the potatoes it was quick and easy to make. It tasted lovely too and my guests had seconds.
