For the dressing

  • 3 tbsp lemon juice
  • 125ml olive oil

Method

  1. Boil potatoes in salted water for 10 mins until tender, adding the asparagus tips for the final 2 mins of cooking. Drain and allow to cool. Whisk together the salad dressing ingredients. then season to taste.

  2. In a large bowl, toss together the potatoes, asparagus, salad leaves, herbs and radishes. Add two-thirds of the dressing, thoroughly mix through the salad, then spread the salad over a large platter. Break the hot-smoked salmon into large chunks, then scatter over the top along with the spring onions. Finish by pouring remaining dressing over the top.

This is the best salad ever! I joined the site just to comment :) this has become a regular in our home it is so yum and fresh. Sometimes I use steak instead of the salmon and pumpkin instead of potato's
(also I add bacon, everything else remains the same) and I think I like my own concoction as much as this one, very versatile.

Went down well. I added more chillies; not necessary. The varied tastes of the herbs, the crunch of the radishes and spring onions, and the tangy zest of the dressing complement each other very well.. I used hot smoked salmon with chillies from Morrison's. Worked very well. Easy to cook. Will adapt in future depending what is in the fridge.

This is a delicious recipe... Couldn't buy the asparagus so I used green beans instead... Did this for 2 but used the same amount of sauceas recomended by the recipe... Was gorgeous! Didn't smoke the salmon but cooked it in the microwave for 3 mins...

This is so delicious - not a healthy option though because of the dressing but who cares! Made it for girls dinner party and was loved by everyone, omitted mint (as got bagged salad with rocket so wasn't sure how it would work together) and asparagus as didn't have any and it worked beautifully (leftovers tasted even better the following day when all the dressing got soaked up by the leaves) can thoroughly recommend! Looks stunning too!

This looks wonderful and would make a yummy summer lunch al fresco. Can't wait to try it. I can also see it using smoked duck breast, which my 10-yr old grand-daughter loves and she's not a fish eater unless it has batter round it!! Roll on summer!

Made this for a girlie lunch at the weekend. One of the girls doesn't like fish!!!! so I used Chicken breasts basted in harissa and baked in the oven instead. Absolutely gorgeous and perfect with a cold glass of rose - felt so sanctimonious even allowed room for dessert

Fabulous dish. Just right for the hottest day of the year with light, fresh flavours but still substantial enough to be filling. For a large main course for 2 people we used about 10 Jersey Royal potatoes, 6/8 spears of English asparagus. c. 200g radishes, loads of parsley & mint, 4 spring onions, and 2 chillis in the dressing. Definitely a recipe for the binder and will make again.

Great dish. Surprisingly filling enough that my husband didn't complain about having salad for dinner! Will try it with chicken next time.
