Salmon & spinach with tartare cream

Method

  1. Heat the oil in a pan, season the salmon on both sides, then fry for 4 mins each side until golden and the flesh flakes easily. Leave to rest on a plate while you cook the spinach.
  2. Tip the leaves into the hot pan, season well, then cover and leave to wilt for 1 min, stirring once or twice. Spoon the spinach onto plates, then top with the salmon. Gently heat the crème fraîche in the pan with a squeeze of the lemon juice, the capers and parsley, then season to taste. Be careful not to let it boil. Spoon the sauce over the fish, then serve with lemon wedges.

    Delicious. I got some salmon half price in Sainsburys that was in a cook in bag over Christmas and froze it. Baked it in the oven. Only had frozen spinach so I pan fried that. Had no capers so I used a teaspoon of horseradish sauce instead with lemon juice and dill. It took 25 minutes from start to finish. Will definitely make this again and try it with different fish too.

    It's the simple sauce that makes this a winner. With three ingredients you have a really tasty sauce and an end results that looks so professional. You could serve this at a dinner party and wow your guests for very little effort. If you need a new way to serve salmon then look no further. Brilliant.
