Salmon & spinach with tartare cream

Method

  1. Heat the oil in a pan, season the salmon on both sides, then fry for 4 mins each side until golden and the flesh flakes easily. Leave to rest on a plate while you cook the spinach.
  2. Tip the leaves into the hot pan, season well, then cover and leave to wilt for 1 min, stirring once or twice. Spoon the spinach onto plates, then top with the salmon. Gently heat the crème fraîche in the pan with a squeeze of the lemon juice, the capers and parsley, then season to taste. Be careful not to let it boil. Spoon the sauce over the fish, then serve with lemon wedges.

    I often find salmon a bit boring but this recipe certainly livens things up. It was easy to make, relatively cheap and quite healthy. Definitely would recommend this as a good source for a midweek meal when you really want something tasty but don't want hours in the kitchen.

    We found this recipe delicious. It is really quick and easy! The sauce is so simple and yet so divine. I have always looked for a nice relatively healthy sauce for fish and I have to say that this is a winner. I will definitely be doing this recipe again soon.

    Second time of trying this recipe (it was so good first time). Adjustments are leave out the lemon, take away spinach and replace with green beans, pak choi and mixed rocket salad. Good presentation and great taste.

    tasty, I loved the crispy salmon this gave - we usually grill or bake ours. I wouldn't recommend doing this all in the same pan tho as the recipe suggests - the spinach took longer than a minute to wilt (and I had to do it in two goes because there was so much of it), and then heating the sauce thru took a couple of minutes, so the salmon and spinach had gone a little cold. Definitely liked the sauce tho and will be making it again for other fish dishes.

    Very simple and tasty - initally I tried the sauce and was not sure on the taste and texture of the sauce but once served with the rest of the meal it was lovely and complemented all flavours

    Yummy! so so quick and easy, although might try with a different kind of fish in future- salmon is expensive for a student! would also love to try the sauce in a jacket potato, perhaps with some tuna...

    lovely - served it with a baked sweet potato. Think I either put too much lemon in the sauce though, or maybe heated it too quickly, as it started to almost go a bit lumpy as it cooled...still tasted nice though!
