Sausages with fruity coleslaw

Sometimes nothing will beat a good sausage, team them with our fruity coleslaw for a fresh taste

Method

  1. Heat grill to medium and snip sausages apart into a roasting tin. Whisk the jelly and oil together well, then use 1 tbsp of the mix to coat the sausages. Grill for 8-10 mins, turning, until cooked through and sticky.
  2. Meanwhile, whisk the lime juice into the remaining redcurrant mixture, then pour into a large bowl. Add the shredded cabbage, carrot, onion and apple and give everything a good mix with some seasoning. Serve the fruity coleslaw with the sausages and split jacket potatoes.

    I generally don't like really sweet additions to a savoury meal so made this with some misgivings but it was absolutely delicious. Will definitely make again

    Absolutely gorgeous! The coleslaw tastes really good, much prefer it to normal coleslaw and will definitely be making this again!

    Delicious - was a bit dubious about the sweet aspect with sausages, but it was so easy and so very tasty. Really lovely coleslaw.

    I was very dubious about trying to feed such large chunks of raw cabbage and onion to my household of students, but this went down a treat. I would recommend slicing everything as thinly as you can, but the dressing was really delicious. Genuinely surprised that it was quite so nice. The lime adds a really good sour tang, which works well with fatty meats like the BBQ Tomato Sausages I served it with. Kept for a few days in the fridge too. Will definitely make again!
