Paprika chicken ciabattas

Turn an open sandwich into a filling and easy meal, with this fast and flavoursome recipe

Method

  1. Cut the chicken breasts in half horizontally and lay each between two sheets of cling film. Bash with a rolling pin until about 1cm thick.
  2. Squeeze lemon juice over the chicken and dust with the paprika. Season with salt and pepper, and drizzle with a little olive oil. Lay on a hot griddle pan or barbecue and cook for 3-4 mins on each side until charred and cooked through.
  3. Halve the ciabatta horizontally and lay, cut side down, on the pan for 1 min. Mix the crushed garlic and mayonnaise, then spread over the cut side of each ciabatta half. Top with the lettuce and chicken, then season with a little salt and pepper. Cut in half to serve.

Make it with pork

Substitute the chicken breast with 500g sliced pork fillet and make the recipe in the same way.

    This recipe is simple, quick, easy and extremelly tasty. Made it today for the first time and my husband just could not get enough :) As I didnt have any ciabatta, I used tortillas I had in the cupboard instead. This will definitelly become a family favorite.

    This is absolutely gorgeous!! It is a firm favourite in our house and really easy to make! I use wholemeal baps and lighter than light mayo and I use lots of crushed garlic, I think its safe to say we never go out anywhere after eating this. I serve these with a mixture of sweet and white potato wedges and lots of salad, yummy!!!

    I did this recipe the other night and it was a real success with her indoors !!! So easy to make and so tasty / tangy / terriffic !!! I couldn't get full ciabattas but Tescos had ciabatta "cobs / buns / baps " whatever...a pack of 4 square ciabatta buns each roughly equal to half a real ciabatta. excellent recipe ! Well done BBC Good Food!

    Great recipe! We usually use "Smoked paprika with sweet red pepper and thyme" from Marks and Spencer and it's really delicious!! Don't be afraid of using iceberg lettuce instead of romaine lettuce (I am not sure, how it's in UK, but in CZ is iceberg lettuce more accessible).

    I made this in the oven and it was fantastic. I did exactly the same as described with the chicken, but then I wrapped it in tin foil to keep the moisture in and then cooked it on 180'C for 25 minutes. I also used 3 cloves of garlic instead of one (and I crushed it and then chopped it) because I love garlic!

    Loved this but had no chicken so used a burger and had no ciabatta so substituted a bun. I added ketchup to this plus a little salad and a slice of tomato. Serve with fries and a cold beer. Ace!
