Tuna sweetcorn burgers

A low-fat alternative to beef burgers and every bit as tasty. Try a salsa with chilli in for an added kick

Method

  1. Whizz the bread in a food processor to crumbs, tip into a bowl, then whizz half the sweetcorn until finely chopped. Add the chopped corn, remaining whole corn, tuna, cheese, spring onions and some seasoning into the bowl with the bread and mix well. Add the egg, bit by bit (you may not need it all), until the mixture is sticky enough to be shaped into four even-size burgers.
  2. Heat the oil in a non-stick pan, then cook the burgers for 5 mins on each side until golden and hot through the middle. Stuff into wholemeal buns with your favourite lettuce and a good dollop of salsa.

Make it into meatballs and pasta

TUNA MEATBALLS WITH TOMATO SAUCE Shape the mixture into 16 meatballs, then fry in batches, turning, for 8-10 mins until piping hot and golden. Serve with your favourite tomato sauce from a jar and a bowl of spaghetti

    made these last night, where so more'ish! forgot to put the cheddar in though but was still tasty! will defo remember cheddar next time as i'm sure they will be even better!

    Anyone watch Hugh Fernely Whittingstalls Fish fight on Channel 4 last week or seen the Greenpeace tinned tuna league table? http://www.greenpeace.org.uk/tunaleaguetable Make sure you use pole and line caught tuna for this dish rather than that has been caught using large nets which kill dolphins, turtles and sharks as by-catch. pole and line tuna can be found at Sainsbury's, marks & spencer and waitrose but unsure about the others...

    Really very nice and easy to make, and incredibly filling! Definitely one to make again, I filled mine with lettuce and sweet chilli sauce. Sainsburys does tinned pole caught skipjack tuna at a very reasonable price. Make it delicious and responsible people!

    Just made these tonight and they went down a treat. My boyfriend and I are so full. Just needed a bit more egg to bind them better. Salad cream was a nice addition to them also. Definitely be making them again!

    I have made these a few times now and they always go down well. Easy to make and very tasty, they are a great alternative burgers using meat. Today I had no spring onions so I used a finely chopped small onion instead, frying it to soften it before adding it to the mixture and it worked fine as a compromise

    This was the first time my partner and I enjoyed the same burger together. My partner is pescetarian and I'm a meat eater so burgers aren't the norm because I really dislike quorn veggie burgers.

    i made these last night and they were a great hit, they tasted so fresh, i decided to add some extra bread to mine as they didnt seem to bind very well but they were super tasty, will have to make them again :)

    Really yummy, and i dont even like tinned tuna but I thought I'd try these due to all the good comments and I'm glad I did. I left out the cheese because I hate it, but they still held together really well. The sweetcorn and spring onions really made them. They were even a really decent size. The only thing I would say is that 5 minutes on 1 side could be too much but thats probably my fault.

    We weren't big fans - won't be trying this one again. I thought from the comments that they'd be really like burgers, but they were too much like tuna and sweetcorn!

    Don't have a blender, is whizzing half of the sweetcorn that important? Or should I try a can of whole kernals and a can of creamed corn - never had creamed corn before as the look of it has always put me off!

    Much better than expected!! I don't have a food processor so chopped some of the sweetcorn using a sharp knife. Worked a treat. I recommend draining the tuna well though as they could easily have become soggy.
