Gnocchi bolognese with spinach

A filling, cheesy bake that is great for lunch the next - if there's any left!

Method

  1. Fry the mince in the oil for a few mins. Tip in the tomatoes and herbs. Fill one of the empty cans with water, add this to the beef, then bring to the boil. Simmer for 20 mins.
  2. Tip half the spinach into a colander and pour over boiling water to wilt, then repeat with the second half. Squeeze out as much moisture from the spinach as you can, then leave to drain in the colander. When the beef is almost ready, cook the gnocchi, then drain. Heat the grill to high.
  3. Stir the gnocchi and spinach into the beef, season, then tip into a large ovenproof dish. Tear the mozzarella into chunks, scatter over, then grill until golden and bubbling.

    this was nice enough, but like the other comments, I did jazz up my bolognese. Main problem with it though was that the gnocchi was a bit cold!

    The first time I'd had gnocchi and it was actually very pleasant!! I think the recipe needs a bit of tweaking and i'd agree with many of the other reviewers - add 1/4 of the tomato tin of water to the sauce to losen it up a bit add a couple of drops of worcestershire sauce (just 3 drops worked) a pinch of sugar (to couteract the toato acidity) Changes i'd make next time -swap mozerella for cheddar (it was too stringy) -add some veggies like courgette which would work really well overall a good mostly store cupboard recipe and i'd make again! Incidently i think serving 4 is ambitious, we got two adult portions and two small portions for lunches to take to work the next day.

    Added garlic, onions and bacon as suggested, plus some tomato paste, and topped off with a sprinkling of oregano which worked a treat - very nice!
