Method

  1. Tip the chopped tomatoes into a sieve and shake to get rid of the juice. Put in a bowl and add the chopped jalapeños and lime juice. Mix in the chopped red onion and coriander. Spread the tortilla chips on the bottom of a large baking dish in a single layer. Cover with a mix of cheddar and mozzarella. Grill or bake until the cheese is melted.
  2. Spoon over the salsa, some soured cream and a few extra jalapeños if you like.

Very nice - spicy salsa is good. I made the salsa a couple of hours early to let all the flavours mingle and so the onion could soften and mellow a little in the tomato and lime juice.

Great recipe, has a bit of a kick but not too hot. Loved by everyone including a child who does not like spicy food who could not get enough! I also made a coupe of hours beforehand for flavours to infuse.
